Build a rigid bridge frame
Two uprights, a heavy top beam and a base plate, all fully welded. Any flex under load shows up as a bent follower and lost pressure.

2. Make the cage and follower
Roll a perforated stainless cylinder that fits the base with a small clearance, and cut a follower plate that slides freely without jamming.
3. Mount the jack and ram
Centre the jack under the top beam with a hardened pad, pushing the follower straight down. Off-centre loading is what breaks these presses.
4. Fit the drainage tray
Collect all runoff into a sloped food-grade tray with a spout to a clean vessel. Stainless or food-grade plastic only — mild steel taints the butter.
5. Prepare the paste correctly
Kernels must be dried, roasted and ground to a smooth paste, then warmed. Pressing coarse or cold paste gives poor yield no matter how much force you apply.
6. Press slowly in stages
Load the cage, press gradually, pause for the oil to run, then press again. Two or three slow stages beat one hard squeeze every time.
Why mine failed
The ways this build usually goes wrong, and what fixes it.
Little oil comes out under full pressure
CausePaste not roasted and kneaded enough before pressing
FixRoast, mill and knead the kernels to a smooth warm paste first. The press only separates oil that the processing has already released — cold, gritty paste holds onto it.
Cage slots blind up and pressure builds with no flow
CauseFines packing the slots
FixLine the cage with clean coarse cloth and clean the slots after every pressing. Widen slots no more than 3 mm or you push solids into the oil.
Frame bows and the screw binds
CauseFrame steel too light
FixStep up to 75 × 50 mm channel and add a cross-brace under the bed plate. A bowed frame will eventually fail explosively — retire it, don't shim it.
Safety notes
- A loaded jack stores enormous energy. Never stand over the ram, and inspect welds before each session.
- Fit a mechanical stop so the follower cannot be driven out of the cage.
- Roasting and warming paste is a burn risk — long sleeves and proper tongs.
- Keep every contact surface food-grade and cleaned between batches.
